Homemade Salsa Recipe
Ingredients
- 4-5 medium ripe tomatoes, seeded
- 1/2 red onion, minced
- 1 clove pressed garlic
- 1/2 green pepper, minced
- 1 cup cilantro, finely chopped (less if you aren’t a cilantro fan)
- 2 tsp. cumin
- 1 tbsp. paprika
- 1 tsp. salt
- 1 tsp. chili powder
- 1 tsp. black pepper
- 1 tsp. red pepper flakes
- 1/2 lime juice
- tsp. olive oil
- Optional – If you like it hot, add 1/2 jalapeno pepper with the seeds removed
Directions
1. Seed all your tomatoes and chop them. The better you seed the tomatoes, the less “water” you will have in your salsa. Don’t use a food processor, it tends to pull more water out of the tomatoes. Note- You want to use ripe tomatoes for this. It will give the salsa more flavor.
2. In a bowl, mix tomatoes and all of the other ingredients.
3. Refrigerate at least 3 hours before eating.
4. This salsa does not have a very long shelf life, so make sure you only make what you can use in a day or two.

You can freeze this. I make a very similar recipe and freeze it in small freezer containers, when you thaw it in the refridgerator it takes just like fresh. I know it seems odd, but my sister in law has been doing it for years and passed the tip along a few years ago to me.
