It seems our lives are busier than ever.  Weeknights are especially difficult with shuttling kids to after school activities, helping with homework, laundry, the list goes on and on.  We don’t even have time to take 5 minutes for ourselves and we still need to put dinner on the table. Here are some simple tips that may help you survive the weeknight chaos and still get a wholesome dinner on the table.

1. Meal prep on the weekends.  If you know there are nights that are are going to be stressful, make a couple of make ahead meals and have them ready to go in advanced.

2. Sandwich night.  Schedule a no cooking required night.  Sandwiches and salads make a great quick weeknight meal.

3.  Take a little help from the store.  Swing by your local BJ’s Wholesale Club and pick up a rotisserie chicken, and some easy sides like Knorr Selects for a super quick meal.

4. When making a casserole or other baked dish, make a double batch and free for another night.

5.  Search Pinterest for quick cooking 30 minute meals. Keep the basics for these recipes stocked in your pantry and freezer so you always have the needed items on hand to whip up a quick dinner.

This recipe calls for easy simple ingredients in addition to the Knorr Selects Four Cheese Risotto.  Shrimp (you can use frozen but thaw first and pat them really dry), cherry tomatoes, kale, milk, garlic, and olive oil. Sautee the shrimp, add in all of the other ingredients except the tomatoes and kale.  Bring everything to a boil and then cook for 7 minutes.  Toss in the kale and then the cherry tomatoes and serve.  How easy is that?!
