So I love to find recipes and make my own little twist on them. My favorite source of recipes is All You Magazine. I don’t ever really follow recipes, but I love to get inspiration from these recipes. This was so incredibly easy to make and tasted delish. This one came from SparkPeople’s Chef Meg and is featured in the 2011 ALL YOU Health and Fitness Special Issue.
Here is my twist on her recipe:
- 2-3 Large Boneless Skinless Chicken Breast
- 1/4 teaspoon cumin
- 1 teaspoon chili powder
- 1 can diced tomatoes with onions and peppers (be sure to drain excess liquid)
- 1/2 cup medium salsa (be sure to drain excess liquid)
- Tortilla Wraps
- Shredded Lettuce
- Shredded Cheese
- Sour Cream
- Cilantro to garnish
Put chicken,tomatoes, salsa, cumin and chili powder in crock pot. Stir. Cook on low for 6 to 8 hours. Shred Chicken with fork, put chicken on tortilla wrap, sprinkle cheese, add sour cream to liking and garnish with cilantro.

I made this tonight–super good! Mine turned out a little runny and wet. And was also a different color than yours (more red) I drained it a bit and it was still fine. Thanks for sharing! It made enough for dinner tonight ( 3 each for my 6 and 8 yr old boys! and 2 for me,,daddy is in iraq) and still made lots to put in the freezer! shared this with all my friends!

Made this tonight and it was great. We were out this evening, so it was wonderful to come home and have this ready to go! My 2 year old and 4 year old both loved it. My in-laws were here too and gave it rave reviews.

Hi Shannon! Thank you! Thank you for this recipe! I made it tonight and it was AWESOME! One of my new faces! I only made a fe modifications. I did not have the diced tomatoes with the onions and peppers; mine had the Italian seasonings-so I chopped up some onion and peppers and threw them in. I also shredded the chicken up about an hour or so before we ate so that the flavors could really soak into the chicken. We loved it!! I have a feeling that this will become a staple for us! :) thanks again!!
