Peanut Butter & Jelly Muffins Recipe

Peanut butter and jelly is a staple around my house. My son will eat it for breakfast, lunch or dinner. When you think of PB&J, you immediately think of sandwiches. I wanted to try something different than cookies and sandwiches.

I tried making peanut butter cupcakes, but they weren’t moist enough to have the consistency of a cupcake. I thought, hey – what about adding preserves and it was at that moment that genius stuck! Peanut butter and jelly muffins.

I was just going to suggest applesauce, it is a great sub for oil in almost any recipe! I am going to try it this weekend. If it works, I will post and let people know.

  • you could try applesauce for the oil

Thanks, I’ll try them with butter.

  • meaning the muffins were terrible with shortening

  • Don’t use shortening, its terrible. The muffins were crumbly, I tried butter and coconut oil – the butter was ok, might have to use slightly more.

Butter for the coconut oil, may be shortening

Was wondering the same thing. I don’t usually have coconut oil around. The recipe sounds very yummy. There is only one thing I love more than nutella, and that is PB&J!
