Lemon Lush is made up of layers of buttery shortbread crust, with a cream cheese filling, lemon pudding, and whipped cream making this light and fresh dessert decadent.
Light and Fresh Lemon Lush Recipe
INGREDIENTS
- 8 tbsp softened Butter
- 3/4 cup Sugar, divided
- 3/4 cup Flour
- 8 oz Cream Cheese
- 1/2 cup Sugar
- 1 pkg Instant Lemon Pudding Mix (3.4 oz)
- 1 3/4 cup Milk
- 8 oz thawed Frozen Whipped Topping
DIRECTIONS
Step 1 – Preheat oven to 350.
Step 2 – Line an 8×8″ dish with aluminum foil.
Step 3 – Cream the butter and 1/4 cup sugar until creamy.
Step 4 – Beat in the flour until well blended.
Step 5 – Press into bottom of prepared pan and bake 25 minutes or until lightly brown on edges.
Step 6 – Allow to cool.
Step 7 – Beat together cream cheese and 1/2 cup sugar until well blended.
Step 8 – Spread over cooled crust.
Step 9 – In another bowl combine pudding mix and milk and beat for 3 minutes until barely thickened.
Step 10 – Spread over the cream cheese.
Step 11 – Refrigerate until pudding is set.
Step 12 – Remove from pan by lifting foil.
Step 13 – Cut into bars.
Step 14 – Spread whipped topping over bars.
