I love a good slow cooker recipe, but I get tired of the standard chicken and soup. This flavorful ragu is delicious and different. This dish is good served over a variety of pastas or over some mashed cauliflower for a low carb option. You can use any kind of sausage you want. I just like chicken sausage since its lower in fat and they come in a variety of fun flavors. This time, I used a roasted garlic chicken sausage from Wegmans. An Italian sausage would make it more traditional and would taste good over some cheesy polenta. Enjoy!

Slow Cooker Chicken Sausage Ragu
- 1 lb. of Raw Chicken Sausage (casings removed)
- 1 red onion chopped
- 3 carrots chopped
- 1/4 tsp of onion powder
- 1/4 tsp of cayenne pepper (You can omit if you don’t like spice!)
- 1 tsp of garlic powder
- 1 tsp of oregano
- 1 tsp of thyme
- 2 Tbsp. of balsamic vinegar
- 2 14.5oz cans of fire roasted tomatoes
- 1 can of tomato paste
- 4 cups of chicken broth
- salt and fresh cracked black pepper to taste
1. Saute onion and carrot in 2 tsp of oil. Add in all the spices. Once the onion and carrot have started to brown add balsamic vinegar to deglaze the pan. Scrape up all the bits and reduce vinegar down. Add mixture to a slow cooker.
2. Add 2 tsp of oil to the same pan. Saute sausage until brown. Add meat to the slow cooker.
3. Pour tomatoes, tomato paste, and chicken broth to slow cooker. Season with salt and pepper.
4. Cover and cook on low for 8 hours or on high for 4 hours.
Check seasoning before serving.
