I love to make Waffles, in particular Belgian Waffles. The light, crispy taste of these waffles are amazing. They are a bit of work, but in my opinion, worth every single second!

What brand waffle maker do you use? So many are the thin, flat waffles. I’m interested in getting a truly big fluffy “Belgian” one (like your pic shows!)

Geeta Patel Lahiri – here is some suggestions for eggless baking.. I have a book “Sinfully Vegan” by Lois Dieterly, she has mentioned the ratio as 1 teaspoon of flax seed powder and 1/4 cup of water for every egg to be replaced. I did try her Vegan Brownies with that ratio and it came out very good. “The Joy of Vegan Baking” suggests to whisk 1 tablespoon flax seed powder and 3 tablespoons water. http://www.egglesscooking.com/2008/10/15/egg-replacement-event-flaxseed-meal/

My son is allergic to eggs. Any suggestions on what to substitute the eggs with and still keep the waffles light and fluffy?

I suggest using 1/3 cup unsweetened applesauce or purchase Energ egg replacer. I use it for my baking/cooking items. http://www.ener-g.com/low-protein-1/egg-substitute.html
Many health food stores carry this item.
