Pumpkin Hummus Recipe
Thanksgiving is my favorite holiday and I could eat turkey 365 days of year, so when turkey day came around I didn’t eat anything before the big meal. I grew up in a small family. There were rarely more than 4 or 5 of us at the Thanksgiving table. Having appetizers on Thanksgiving never occurred to me. Now that I don’t spend the holiday with just family I have a different perspective. I often celebrate at friends’ homes where it is more of a drop-in atmosphere. Sure, they serve a main meal but people are popping in earlier in the day just to say hello and visit before they are off to the big meal at their own home.

This yummy appetizer uses basic pantry ingredients; your usual hummus ingredients with a twist of adding pumpkin.
Place ingredients into a food processor and season with salt and pepper. Blend until smooth.
Place hummus in a serving dish, drizzle a little more olive oil on top and a sprinkling of paprika to serve.

Pumpkin Hummus Recipe
Yields: 8-10 servings
INGREDIENTS
- 1 (16 oz.) can garbanzo chickpeas
- 3/4 cup pumpkin purée
- 2 garlic cloves or 1 teaspoon minced garlic
- 1 Tablespoon lemon juice
- 1 Tablespoon honey
- 3 Tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon cayenne pepper
- Garnish: 1 Tablespoon olive oil and sprinkling of paprika
DIRECTIONS
1. Purée all of the ingredients except the olive oil in a food processor or blender until smooth adding the olive oil slowly until a paste forms. Season with salt and pepper.
2. Transfer to your serving bowl and top with 1 Tablespoon of olive oil and a sprinkling of paprika.
3. Serve with chips, pita bread or fresh veggies.
