Mexican Rice & Beef Tacos Recipe
Spring is finally here! Warmer weather, open windows and lots of Spring family activities. It’s time for wardrobe changes and menu changes. We all want to put a tasty meal on the table but with after school activities and family plans, who has time! Unilever has a lot of great recipes inspirations on their website. I stopped by my local Acme to pick up some I Can’t Believe It’s Not Butter!® Spread and Knorr® Fiesta Sides™ – Mexican Rice. I put my own spin on their taco recipe. Here is my Mexican Rice & Bean Tacos Recipe. This is the perfect meal for any weeknight, Taco Tuesday or even for a family Cinco de Mayo celebration!
Using Knorr Mexican Rice Sides in addition to ground beef adds the perfect seasoning to this quick taco recipe. The Mexican Rice & Beef Tacos Recipe is quick and easy to make and so yummy. In a large pan or pot over medium high heat, melt 1 tablespoon of I Can’t Believe It’s Not Butter!® Spread; add in onions and cook until onions are softened. Add in ground beef. Brown ground beef, about 6-7 minutes. Add in garlic powder and sofrito*, blend together. Remove beef into a bowl, set aside.
To the same pan or pot, add in remaining tablespoon of I Can’t Believe It’s Not Butter!® Spread, contents of Knorr® Fiesta Sides™ – Mexican Rice and 2 cups of water. Turn heat to high and bring to a boil. Stir contents. Lower heat until it becomes a simmer. Cover pot or pan and cook for about 7 minutes, or until rice is tender. Stir occasionally. Once rice is tender, add in beef and chopped cilantro. Heat through and serve in tortillas, and garnish as desire.
These tacos are seriously yummy and so quick and easy to make. Your family will love them!

Mexican Rice & Beef Tacos Recipe
Ingredients:
- 2 tablespoons I Can’t Believe It’s Not Butter!® Spread
- 1 pound lean ground beef
- ¼ cup chopped yellow onion
- 2 tablespoons of sofrito (optional)
- 1 teaspoon of garlic powder
- 2 cups of water
- 1 package of Knorr® Fiesta Sides™ – Mexican Rice
- 8 corn tortillas
- 2 tablespoons of chopped cilantro
Garnish Options:
- Avocado
- Cilantro
- Sour cream
- Shredded cheese
- Tomatoes
Directions:
- In a large pan or pot over medium high heat, melt 1 tablespoon of I Can’t Believe It’s Not Butter!® Spread. Add in onions and cook until onions are softened.
