This is my first time participating! I love to cook and thought I would share what’s on the menu for my family! This week will be eating mostly freezer meals, since we just got home from vacation I have alot to do!
Monday – Grilled Chicken, Roasted Potatoes and Grilled Squash.
My husband actually made this last night and I never got around to eating it. There was a ton leftover. He won’t be in for dinner, so there will be more than enough to feed my son and I.
Tuesday – Easy Shepard’s Pie.
I will be using a Freezer Meal that I have already prepared. It is a very easy meal to prepare and because it’s only one dish, it’s easy cleanup. We have a busy day,so I will be able to just come home and pop this in the oven. It freezes well. I do change the recipe slightly by adding sour cream to the mashed potatoes, which I think makes it taste richer. I also use turkey burger instead of beef .
Wednesday- Pasta & Turkey Meatballs with Garlic Bread
This is quite basic. I make homemade meatballs and use Ragu Sauce. It’s once of those simple standbys. This week it’s angel hair pasta – which is also frozen. This one I will just heat up in the microwave.
Thursday – Chicken Alfredo Pasta with a tossed salad
This the easiest and great tasting chicken alfredo I have ever made. It’s not complicated. However, it does not freeze well. This is one I will be cooking.
Friday – Grilled Steak, Roasted Red Potatoes and Vegetable
We don’t eat much beef. I personally am not a beef fan. I have to throw it to keep the family happy. I just take a bite or two of it, and tend to find leftover chicken to eat.
Saturday & Sunday – We usually eat leftovers and do dinner out one night!
