Creamy Pasta Salad Recipe

Creamy Bacon, Mushroom, and Corn Pasta Salad
1 lb. of chopped bacon
20oz. of thick sliced baby bella mushrooms
2 garlic cloves minced
1 tsp. of chopped thyme
2 cups of corn kernels frozen, canned, or fresh
1 box of cavatappi pasta
2 tbls. of apple cider vinegar
1 cup of halved grape tomatoes
1 cup of cubed sharp cheddar cheese
chopped green onion for garnish
salt and pepper to taste
Creamy Dill Dressing
2 cloves of garlic minced
2 tbls. of chopped fresh dill
1 1/2 cup of mayonnaise
1 cup of sour cream
1 cup of milk or buttermilk
1 tbls. of dijon mustard
2 tsp. of worcestershire sauce
1 tsp. of onion powder
1 tbls. of olive oil
salt to taste
fresh cracked pepper
Preheat oven to 425
1. Line a baking sheet with tin foil.
2. Toss mushrooms with garlic, thyme, and coat with olive oil. Sprinkle with some salt and black pepper. Spread evenly on baking sheet.
3. Roast for 15-20 minutes. Set aside to cool.
4. Heat a saute pan on medium heat.
5. Cook chopped bacon until crisp. Set aside to cool.
6. Leave 2 tbls. of bacon fat in pan and add corn.
7. Saute corn with a little salt and pepper for a few minutes. Set aside to cool.
8. Boil water for pasta, add salt, and cook pasta until al dente.
9. Strain pasta and rinse with cold water until pasta is cool.
10. In a large bowl, mix cooled pasta with vinegar.
11. Mix in cooled bacon, mushrooms, corn, and cubed cheese.
12. Whisk together dressing ingredients. You can add more milk if its too thick.
13. Mix 3/4 of dressing into pasta mixture. Chill for at least an hour.
14. Mix in the rest of dressing before serving.
15. Taste and re-season with salt and pepper if needed.
16. Garnish with tomatoes and green onion.
