This is a quick and easy way to do something different with your potatoes!
The Victims
- 3 Potatoes (or 1 potato for each serving)
- Sea Salt & Pepper
- 1 piece of bacon (for this I prefer to get slices from the deli, rather than prepackaged)
- 1 red onion
- Rosemary
- Olive Oil
- Cooking Spray
1. Thinly slice potatoes and coat with Olive Oil.
2. Cut onion into 4 quadrants. Separate the slices. You do not want to cut the slices – see photo above.
3. Cut bacon into small pieces. You will want to make sure you use regular bacon. I prefer to buy the bacon at the deli over the package stuff for this. The fat from the bacon gives the potatoes flavor. You only need a small amount of bacon in each bake.
4. Cut 3 pieces of aluminium foil large enough a 1/3 of the potatoes. Very lightly spray the foil with cooking spray. VERY LIGHTLY. Do not over do it. Put potatoes in center of foil. (each serving is made into a separate bake. Do not cook all the potatoes together — they do not cook properly)
5. Add bacon, onions to the foil. Then sprinkle with salt and pepper. (you can use as little or as much bacon and onion as you would like)
7. Tightly wrap foil around potatoes. Bake in oven on tray on 375 for 35-45 minutes, or until potatoes are fully cooked and tender. Do not overcook – potatoes will be mushy.
Remember – each serving is a separate bake. You will have 3 separate aluminum foil wraps for the oven (or more if you are making more servings)!

this sound so yummy!!! i need to try… have you tried them without bacon?? BIG difference? I dont cook much lol
