Irish Stout Cupcakes & Irish Cream Frosting Recipe
I am Italian and Irish with a little Pennsylvania Dutch thrown in for good measure. What does that mean, I am opinionated, have a temper and I love carbs! LOL I was trying to come up with a dessert recipe to celebrate the Irish part of me that didn’t include lucky charms or shamrocks. Something for an adult gathering or St. Patrick’s Day party. It also needed to be easy to make because I am not a baker! This is what I came up with: Irish Stout Cupcakes & Irish Cream Frosting Recipe. This recipe is easy and you probably have some of the ingredients already on-hand. These cupcakes were seriously yummy! You don’t really taste beer; it just gives the cupcakes a deeper chocolate flavor.

Irish Stout Cupcakes & Irish Cream Frosting Recipe
Cupcakes
- 1 Box of Dark Chocolate Cake Mix (I used Pillsbury)
- 3 Eggs**
- 1/2 Cup Oil**
- 1 Cup Irish Chocolate Stout Beer
**Follow package directions for eggs, oil and water. The beer replaces the water in the recipe.
Combine all ingredients in a large mixing bowl and mix with hand or stand mixer for 2 minutes on medium speed. Spray cupcake pan with non-stick spray or use cupcake papers and fill half full of cupcake mixture. Bake for 19 minutes (adjust for your oven) at 350 degrees. Cupcakes are done when a toothpick stuck in the middle comes out clean. Makes about 24 cupcakes.
Frosting
- 1 Package of pre-made cream cheese frosting in a can (or you can use your own homemade recipe)
- 2-3 Tablespoons of Irish Cream flavored syrup, or Bailey’s Irish Cream liqueur (Adjust to your taste. I like things on the sweeter side. You could replace the syrup or liqueur with a splash of mint flavoring of choice)
Remove frosting from container and mix well with syrup or liqueur. Frost cupcakes and decorate with green & white sprinkles.
