I had to use up some chicken breast that I had in the refrigerator. I wasn’t inspired to do anything fancy. So I made a Chicken Scampi like meal. I am sure that this isn’t exactly a “real scampi” but it is what I thought was. Because I cook most of the time without a recipe, I estimate how much of each item I used. Feel free to use less or more depending on your individual taste.
Here is what you will need, a.k.a. my victims.
3 boneless, skinless chicken breast pounded
1 cup of butter
1/2 cup of olive oil
1 teaspoon of parsley
1 teaspoon of basil
1/2 teaspoon orgeno
3 -4 cloves of garlic (depending on your taste)
3/4 teaspoon salt
2 tablespoons of lemon juice
splash of white wine
1lb of linguine
** I used dried herbs for this recipe because I was feeling lazy.
Step 1. Boil Chicken for about 10 minutes. Get pot of water ready for your linguine.
Step 2. Let chicken cool and slice into strips (if you are feeling unmotivated, buy the Perdue precut strips). Start your linguine as per directions on the package.
Step 3. Use olive oil and 1/4 butter to saute chicken. Put chicken, 1 clove of garlic and spices in pan. Cook until chicken juices run clear. Add a little extra olive oil if you need it.
Step 4: Remove chicken from pan. Add remaining butter, lemon, garlic, and splash of white wine if desired. Saute garlic for 1-2 minutes. Be sure to mix the drippings in the pan into the mixture.
Step 5: Return chicken to pan. Coat chicken with butter/garlic mixture.
Step 6: Drain and put linguine in bowl.
Step 6: Mix Chicken with linguine. Top with salt and pepper. Serve immediately. This is great with a crunchy French load and tossed salad.
** note – If you like this really buttery, just add more butter.

mmmmmm…I just had chicken scampi at Olive Garden last night and it was yummy!!! They mix in green, red, and yellow peppers as well as onions. mmm…mmm…good!

That looks really good. I bet it would be good with some grated ramono and parm. chesse on top. You could even throw in broccoli or sugar snap peas or your families fav. veggie. Thanks for the recipe.
