Kicked Up Philly Cheesesteak + Weeknight Wow Sweeps!

Leftovers can be a pain. They tend to grow in my fridge until I run out of room. I am frequently throwing away food because I don’t use it. I should use them during the week for quick dinners, but you know how that goes.

After doing a few recipes using VELVEETA® and RO*TEL®, I found I had a leftovers, but not enough to create a full dish.

I was trying to think of a way to use up the leftovers, without reverting to the old stand by - RO*TEL® dip.  So my sister, Natalie, had a genius idea.  After she saw my Kicked Up Grilled Cheese post, she said that we should try it on a cheesesteak. Of course – a cheesesteak. What Philly girl doesn’t love a cheesesteak!

So I gave it a go — and of course, it turned out fantastic.  Now, I know some of you like your cheesesteaks a particular way — but give this a shot, you won’t regret it.

Since this is really using up your leftovers, you don’t need specific measurements – just use what you have on hand!

Veggie Pizza Roll Recipe & Enter to Win $1,000

So, I was asked to participate in the Pillsbury Creative Crescents contest and couldn’t say no.  Pillsbury Crescent Rolls are so versatile and easy! Around the holidays, I made these fantastic pizza rolls. I was looking for a way to get more veggie in Evan and this is perfect! Who doesn’t like pizza – ooey gooey cheese and sauce – topped with some delicious veggies.  This was a total hit with my son and husband! I hope you like it as much as we did! 

P.S. This is so versatile, you can put just about anything in it! 

Ingredients

  • 1 package of Pillsbury Crescent Rolls
  • 1/4 cup of Pizza Sauce
  • 6 oz Pizza or Mozzarella Cheese (more or less depending on your taste)
  • 1/2 small onion (sliced thin, then diced)
  • 1/2 small Green Pepper (sliced)
  • 1/2 small  Red Pepper (sliced)
  • 1/2 small Tomato (diced)
  • Dash of Oregano/Salt and Pepper
  • Optional – Black Olives

 

Directions

Preheat oven to 375. Lay crescent rolls out in a star shape – as shown above. (Tip – it helps if the crescent rolls are cold when you are separating them.)  Spread sauce lightly along each crescent roll. 

Sprinkle 1/2 of your cheese on the crescent rolls. Add your veggie toppings to the center of the crescent rolls as show above.  Sprinkle remaining cheese on crescent roll. Sprinkle dash of Oregano/Pepper and Salt to taste.

Cheesy Spinach and Bacon Dip | Perfect For the Playoffs!

This month’s Weeknight Wow Recipe is so fun! With all the playoffs and the Super Bowl, this dip is bound to be a hit. It is so incredibly easy to make!  Plus, with a name that includes cheese and bacon – hello!

I made this and left some on the counter while I was taking this picture. I came back and found an empty bowl. Hmm, I guess someone liked it {namely Frank}.

This literally took about 15 minutes from start to finish. Pair this with tortilla chips, veggies, cracker or even sourdough bread.

PREP TIME: 10 minutes

TOTAL TIME: 15 minutes

MAKES: 4 cups or 32 servings, 2 Tbsp. each

Chili Cheese Popcorn Recipe

In my house, popcorn is one of our favorite foods.  We love to make Caramel Corn and other types of flavored popcorn.  I love flavored popcorn, but am not fond of the prepackaged stuff… I am not quite sure whats in it.  I prefer to make it on my own – it is quick and I know exactly what I am getting.

Homemade Caramel Corn Recipe

One of my favorite things “down the shore” is caramel corn on the boardwalk.  {If you are from the NJ/PA area, you will totally understand what “down the shore” means, if it not, it means at the beach}.

I asked Mystery Husband to recreate the popcorn at home. He found an awesome recipe from AllRecipes that he tweaked slightly. It was so yummy, that this recipe has become a a regular treat in our house.
