Slow Cooker Mac & Cheese Recipe

I really love cooking with my slow cooker. When the weather gets warm, I prefer to use it so that I don’t heat up the entire house. I have tried just about everything in the crockpot. A few years ago, someone mentioned making mac and cheese in it. I was skeptical but I gave it a whirl. I was surprised! The mac and cheese is really tasty!

Unlike some other recipes for the crockpot, you will have to check the mac and cheese frequently.

I highly suggest the first time you make this, you are available to check on it every half hour. The temperature differences in crockpots really can make a difference in your final dish. I would make this the first time per the recipe, but watch the time. You may need to slightly adjust the amount of milk or add more milk to keep it creamy. This will depend on how hot your crock pot gets.

I cannot believe it is already March. Even though it’s still cold out, we are starting our baseball season. During baseball season, we have tournaments every weekend. This means we usually leave early in the morning and come home for a few hours for dinner – then back to the baseball fields. It is very easy to eat fast food during the spring tournaments so I really have to plan ahead so that we don’t fall into that trap.

I rely on my slow cooker a lot during tournament season. We really enjoy this one dish meal – it includes carbs, protein and veggies. We also try different vegetables – we have used green/red peppers, zucchini, squash and more. We also garnish with fresh parmesan or Romano cheese – which gives it an even richer taste.

One Dish Meal: Cheesy Beans & Rice Recipe

Here is another one of my favorite Weeknight Recipes!

There are some weeknights when dinners are an after thought. I try to meal plan, but it doesn’t always happen.  I have some items that I always keep in the house – for the nights when I don’t have a plan.  This recipe includes these stockpile items and is super quick to make. I have a rice maker, which makes it even easier to make.

Did I mention that this is one dish meal?

This beans and rice recipe is so easy and versatile – you can make it as a side dish or as a main dish. It is perfect for a cold winter day. It has just enough kick to please your taste buds!

So here is what you need to make this one:

  • 4oz of VELVEETA®
  • 3 Cups of cooked white or brown rice
  • 2 10 oz Can Ro*Tel® Diced Tomatoes & Green Chilies
  • 1 small Can of Red Kidney Beans (drain)
  • 1 small Can of Black Beans (drained)
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 1 small Can of Pinto Beans (drained)
  • optional – ground beef or grilled chicken

Combine all ingredients in pot. Do not drain Ro*Tel® Diced Tomatoes, include all contents of the can.  Mix all ingredients and cook on med heat for 20 minutes and VELVEETA® is fully melted. Stir frequently. Optional – add beef or chicken to make a one dish meal.  Add salt and pepper to taste.

Cheesy Chicken Rotini Recipe 

I love to cook. I could spend hours in the kitchen each day.  However, the reality is, I don’t have hours to spend cooking. Somedays, I am lucky if I have minutes!

I am always on the lookout for quick, easy recipes as options for the days I don’t have time. My family never notices the difference when I spend 2 hours cooking or a half hour. They really just appreciate that I took the time to cook at all.

Here is a quick and easy – but yummy recipe for those busy week nights. It is also a great recipe to let the kiddos get involved with. It is so simple, that you really cannot mess it up!  If you have a picky kiddo, this is a perfect compromise on mac & cheese – getting your veggies in too!

Side note – I think it looked really pretty on my dishes too!

Do you have zucchini growing in your garden? With all the free pasta we have been seeing lately, this should be an inexpensive recipe to make!

Kelly shows a simple, yet delicious way to use your zucchini.  This recipe is a light summer dinner!  For this recipe, you will need 3 medium zucchini and plenty of garlic.

Recipe: Rotelle Pasta with Pancetta & Peas

I made this pasta dish the other evening. It was easy to make and filling. It even looked pretty on my plate!

This recipe was based on Giada’s Wagon Wheel Pasta and Pancetta.

  • 1 pound spiral rotelle pasta
  • 1 tablespoon olive oil
  • 1/4 cup olive oil
  • 8 ounces pancetta, diced
  • 1/4 small onion, chopped
  • 1  cup chicken broth
  • 2 1/4 cups sugar snap peas cut into 1 inch bite sized pieces
  • 2 1/4 cups petite peas
  • 2 cups  grated Parmesan (do not use the stuff that is powder like – either grate yourself or buy bagged)
  • 1-2 tablespons of lite whipping cream
  • salt and pepper to taste
