Crock Pot Beef Stew Recipe

I love this time of year. The weather has just begun to change here, and temperatures are dipping into the low 40′s at night. The trees are changing colors and the air has a fresh, crisp coolness to it.

It is the perfect season for cooking comfort food. As the daylight gets shorter and the tempatures chillier, I begin to rely on my crockpot for easy, hearty meals.

My husband asked why I haven’t made beef stew in several years. I can’t believe it was true, but it turned out it was. I don’t know why, because this meal is easy and delicious. I dusted off my old recipe card and made this yummy dish!

Here is an example of a recipe you will find:

Muffin-Tin Pizza Loaves

  • 1 egg, beaten
  • 1/2 c. pizza sauce
  • 1/4 c. Italian-flavored dry bread crumbs
  • 1/2 t. Italian seasoning
  • 1-1/2 lbs. ground beef
  • 1-1/2 c. shredded mozzarella cheese
  • Optional: additional pizza sauce, warmed

In a large bowl, combine egg, pizza sauce, bread crumbs and Italian seasoning. Add beef; mix well. Press into the bottoms and up the sides of 12 greased muffin cups. Spoon cheese into the centers. Bake, uncovered, at 375 degrees for 15 to 18 minutes. Serve with additional pizza sauce, if desired. Makes 12 servings.

Chocolate Chip Zucchini Cookie Recipe

The Last Chocolate Chip Zucchini Cookie Recipe

Ingredients

Basic Cookie Recipe

  • 1/2 cup butter
  • 2/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon brown sugar flavor or Madagascar vanilla
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 2 1/2 cups all purpose flour

Inclusions:

  • 1 cup dark chocolate chips
  • 1 cup golden raisins
  • 1 cup chopped walnuts
  • Zucchini:
  • 1 cup grated zucchini
  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or grease very well.

1. For the basic cookie: Cream together the butter, sugars, and salt. Add the vanilla and eggs and beat again.
2. Add the flour and baking soda to the creamed ingredients and beat until well dispersed, scraping the sides of the mixing bowl once. The dough will be thick like clay.
3. For the inclusions: Add the chocolate chips, raisins, and walnuts and beat until just mixed.
4. For the zucchini: Add the zucchini and bake until just combined. The water in the zucchini will transform the dough to a medium batter. Stop once it is combined or you will continue to force water from  the zucchini and your batter will be too runny.
5. To Bake: Using a large ice cream scoop, scoop mounds of dough onto the prepared sheet. Bake for 10 to 12
minutes or until done. The tops of the cookies should look wet and the edges should be starting to brown.
Immediately remove the cookies from the sheet to racks to cool. Repeat with the rest of the batter.

Baker’s notes:
These are large cookies–which is some of their appeal. If you make smaller cookies, reduce baking times

White Chocolate Chip Cranberry Pancakes Recipe

Cranberry Pancakes Recipe 

  • 1/2 c. all-purpose flour
  • 1/2 c. quick-cooking oats, uncooked
  • 1 T. sugar
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1 t. vanilla extract
  • 3/4 c. buttermilk
  • 2 T. oil
  • 1 egg, beaten
  • 1/2 c. white chocolate chips
  • 1/2 c. sweetened dried cranberries

In a bowl, mix flour, oats, sugar, baking powder, baking soda and salt. Add vanilla, buttermilk, oil and egg; stir until well blended. Stir in white chocolate chips and cranberries. In a large, lightly greased griddle over medium heat, drop batter by 1/4 cupfuls. Cook for about 3 minutes, until tops start to form bubbles. Flip and cook 2 additional minutes, or until both sides are golden. Serves 4.

Homemade Taco Seasoning

Ingredients:

  • 1/4 cup chili powder

  • 1 tablespoon + 1 teaspoon sea salt
  • 1 tablespoon + 1 teaspoon black pepper
  • 2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano

Directions:

  1. Combine all ingredients in a small jar with a tight lid. Shake until thoroughly mixed.
  2. Use 2.5 tablespoons for every pound of meat.

Homemade Salsa Recipe

We are big salsa fans here. I wanted to share you my Homemade Salsa Recipe.

If your garden looks like mine, you are wondering what to do with all the tomatoes that you have. This salsa recipe just takes a few minutes and is super tasty!

Homemade Salsa Recipe

Ingredients

  • 4-5 medium ripe tomatoes, seeded
  • 1/2 red onion, minced
  • 1 clove pressed garlic
  • 1/2 green pepper, minced
  • 1 cup cilantro, finely chopped (less if you aren’t a cilantro fan)
  • 2 tsp. cumin
  • 1 tbsp. paprika
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1 tsp. black pepper
  • 1 tsp. red pepper flakes
  • 1/2 lime juice
  • tsp. olive oil
  • Optional – If you like it hot, add 1/2 jalapeno pepper with the seeds removed

Directions

1. Seed all your tomatoes and chop them. The better you seed the tomatoes, the less “water” you will have in your salsa. Don’t use a food processor, it tends to pull more water out of the tomatoes. Note- You want to use ripe tomatoes for this.  It will give the salsa more flavor.

2. In a bowl, mix tomatoes and all of the other ingredients.

3. Refrigerate at least 3 hours before eating.

4. This salsa does not have a very long shelf life, so make sure you only make what you can use in a day or two.

Easy Pesto Sauce Recipe

Pesto Sauce Recipe

My garden is overflowing with Basil.  I decided to make some Pesto Sauce and freeze it for later.  This recipe is soooo easy, there is no reason to buy premade pesto sauce.  This sauce can be used for pasta, pizza and sandwiches. This recipe makes enough for approximately 6-8oz of pasta or 4 sandwiches.

Easy Pesto Sauce

1 cup of fresh basil
1/2 cup fresh parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup of extra virgin olive oil
1-2 Cloves of Garlic

*If you want to add pine nuts,  use 1/4 cups.

Combine basil, parmesan cheese, olive oil, salt, garlic & pepper in food processor. Pulse until blended, but still a rough texture. Be sure to scrape the sides of the processor a few times to make sure it is mixed in.
